English Muffins

It’s amazing the things I can get up to when I’m supposed to be writing… like today, for instance, when I decided it was time to experiment with English Muffin recipes, attempting to recreate the very same delicious Orowheats we bought and enjoyed when we lived in Calgary. And, I’m very pleased to report that I was successful! Here are some pictures to prove it:

First, you make the dough, let it rise, cut it into 3-1/2″ rounds, and fry them in a dry cast iron pan (I used our Paella pan because I could fit all 16 muffins in at one time) scattered with cornmeal…

and remove to a rack when brown. Allow to cool…

Split with a fork (notice how perfect these are! Sorry, I’m bragging…)

Then toast, slather with butter and raspberry jam, and enjoy with cappuccino!

That was my brilliant morning! Now to get back to that writing, but there are still 15 muffins left…

    As with the fabeled bagels, I only have your word that they’re perfect. The pictures could have been doctored in Photoshop. I’m pretty skeptical…

    Hang on, do your muffins reproduce? You put all 16 muffins in the pan, the pictures clearly show at least on being prepared to be consumed and then you state you still have 17 left!! Now maths wasn’t my strong point at school but I do know that 16 minus 1 equals 15 ;-)

    Com’mon! I’m your older sister - when have I ever lied to you? Besides, you’ve eaten my Chelsea Buns, haven’t you? Or were you just saying this, hoping I’d bake something when I’m in Toronto this summer to prove how good they really are?

    Well, Dickie, at least I know someone is reading my blog AND paying attention! It wasn’t so much a matter of faulty math as poor editing. I started out with 18 muffins when I first wrote the blog. Then I bagged what was left on the counter, after eating one, and was surprised there were only 15 left. I counted the muffins in the pan in the picture, surmised that Dennis and the cats hadn’t snarfed a couple while I wasn’t looking, so I changed the 18 to 16 in the post. But then I remembered later I didn’t change the second number of 17. You caught me before I could get in here this morning to re-edit. Thanks for keeping me on my toes - and for catching the mistake before my eagle-eyed baby sister noticed!

    Oh, baby sister! Mmmmmmmmm… I’m eatng another muffin, but I do promise to eat an imaginary one for you as well. You can pretend you’re enjoying it.

    And, Dickie, here’s a math (we drop the “s” in North America) question for you - If I started with 16 muffins, ate one yesterday, Dennis and I each ate one this morning, then I had another imaginary one for my sister, and set 3 aside to deliver to Pammy Cantina to sample, how many are left?

    You might well drop the s but it’s maths where I come from!!

    The first answer is 9. As we are communicating in cyberspace, nothing here is actually tangible therefore none of your muffins are real.

    The second answer is 10. In the real world things are tangible therefore the imaginary one does not count.

    I would however strongly recommend you go and see a shrink if you are eating imaginary food items!!

    The answer, Dickie, is about 14 pounds each (1 stone, 6.36 kg.)

    What can I say? it’s all been said, except to mention that YOU WILL be making up a few batches when you come to T.O. Every time I start to think perhaps you’re really crackers, you go and make muffins or some such delight! Maybe that’s the ticket, you should try crackers? in fact, animal crackers for our soup, and we’ll have Shirley Temples too (see? I’m the true nut-bar).

    I already DO make cracker-bread. Perhaps I haven’t made it for you, but it’s my one guaranteed party trick as it doesn’t take much work at all (is foolproof, in fact) and everyone seems to love it. Add it to that summer list I know you have tacked up on your fridge…
